This course includes:

• Baking with electric oven explaining the secrets of Dual Temp ovens and Gas ovens..
• Stretching dough-balls on the blue steel pan.
•Baking Roman pizzas bases :
Pizza Bianca and Tomato pizza base, using the right setting and explaining the different temperatures and setting using different type of ovens.

 

Equipments needed for the Course:

1. deck oven gas or electric able to reach at least 350C.
(No Neapolitan Pizza ovens).
2. spiral mixer one speed with at least 180RPM or spiral mixer 2 speed with second speed at least of 180RPM.
